Only one Russian restaurant in Singapore, serving from $30 dinner to $750 caviar

Once you enter the restaurant the BuyaN has the atmosphere much different from others. What makes BuyaN different from other restaurant? I had an interview with the senior manager of BuyaN,only one Russian restaurant in Singapore.

BuyaN is bar & restaurant.1st floor is a bar with DJ and band stage, 2 and 3rd are floors for expensive restaurants. It's located in Duxton Hill and a little far from the center of the city. 10 years ago, this area was so crowded. But, once karaoke, clubs were all gone, whole this area was shut down too. Now it's becoming a hot spot again. Number of restaurants is increasing.

The owners of the restaurant are lady and gentleman and she is an editor in chief in Singapore.

Appearance

The interior design of the bar on the 1st floor is the re-creation of a bar existing in Moscow. Stools and tables are made of thick logs, and the walls are also made of logs. It's full-dress and comfortable. The restaurant on the 2nd floor has a big wine cellar. From wine glasses to tables they are all first-class. Wine is served in a glass which is chosen from various types of shapes depending on the wine you choose. Bottles in wine cellar are all the collection of the owner.

 '' Main director of BuyaN is an investment banker and he got the contract with the landowner for 9 years. Maybe his negotiating skill as an investment banker worked well'' said Mr.Doray.

The contract with landowner is really important and big issue for managing restaurants in Singapore. The reason why BuyaN can spend much money on the interior design is this long term contract. 60% of the customers in the bar are European and American working for investment banks.

High sales volume is beer. But BuyaN doesn't carry normal beer like Heineken. It has only unique beer like Russian beer and Kazakstan beer and serving as draft beer. Offering different and unique things, BuyaN avoid price competition.

In the restaurant, normal weekday is very quiet, but it become full on holiday by many couple guests and it has 120 people group customer coming to the restaurant every month. And also there are many Russian guests who work for oil companies like Lukoil and BTB. Caviar full-course dinner costs like $750. ''One guy came in here and drop bill $20,000 for lunch at one time three people'' said Mr.Doray.

BuyaN is also the only one importer for Russian champagne in Singapore and distributing them to restaurants and bars

''Russian champaign had not been exported for 100 years. Because French champagne is too big name and famous. Everybody knows the names of French champagn and they dominate the market. Russian is not famous and sales is tough. But the price is reasonable about $50~60. Russia is difficult about export like caviar. BuyaN also helps Russia bringing the vodka.'' said Mr.Doray.

As a high-class restaurant, the food and wine served in BuyaN is first-class, but they don't want any rating like Michelin. However, Michelin doesn't exist in Singapore yet. 

''The image of the Michelin rating restaurant is high and expensive. But we are not. If you see the bar, you can spend every check $40 for a meal, a beer, and good glass of wine. We don't say you come to BuyaN you must spend $400 per person. We have DJ, bands, really casual. We feature ourselves as a normal restaurant, Russian dining experience. We don't want people think that we are too expensive. Of course, here you can have stroganoff and caviar dinner for more than $400. We don't want dictate where you sit depending on how much you spend. To survive in F&B industry, BuyaN targets all class of customer.'' said Mr.Doray.

You can order every wine in a single glass and you can buy caviar from 1gram. This is the BuyaN way to satisfy customers from all different level.

''You dress up and go to the high-class restaurant with your girlfriend with very sexy outfit. People want to do that kind of things. This is human nature. But how many times can you do it? If there are one guy spending $10 comes here 10 times, and one guy spending $100 comes only once, then both are the same as a result. BuyaN targets both of them and that's the way I look as the business.'' said Mr.Doray.

 The advantages are the contract for 9 years and aquisition of customer in different level with wide price range. BuyaN is high-class restaurant but still you don't feel awkward. That's why BuyaN is very successful.
